Christmas Cake Recipe With Rum. We just made this recipe at thanksgiving. Turns out the original recipe only calls for a tablespoon of rum, but ashley soaked the fruit overnight and used ‘about a quarter of a bottle’ (about ¾ cup).

In a large bowl, whisk together cake mix and pudding mix. Place half the soaked fruit in a food processor and blend to a thick purée. Put all of the dried fruit and the stem ginger in a bowl, then pour over the rum and port.

Boil for 4 to 5 minutes, stirring constantly.
